Sugar-Free Banana Bread

(serves 4)

– As tender as cake –

INGREDIENTS:

3 bananas

2 M size eggs

20 g melted coconut oil

35 g coconut flour

20 g tapioca

3 g baking soda

2 pinches of cinnamon

1 pinch of salt

  1. Crush the bananas using a fork, add the eggs and mix until you get a creamy paste, without any pieces of fruit. If you are in a hurry, you can use the hand blender. Then add the melted coconut oil.
  2. Mix the coconut flour, the tapioca, the baking soda, the cinnamon and the salt. Add this mixture to the banana paste and mix until you get a lump-free dough.
  3. Preheat the oven to 175 °C.
  4. Pour the dough into a silicone bread pan. If you don’t have a silicone pan, you can use any type of pan lined with baking paper. Bake the banana bread for 30-35 minutes. When it is cool, remove it from the pan.
